
Palak poori, a popular Indian dish made with spinach and deep-fried wheat flour balls:
Ingredients:
- 2 cups whole wheat flour
- 1 cup chopped spinach (palak)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/4 tsp asafoetida
- Salt to taste
- Water as needed
- Oil for deep-frying
Instructions:
- In a pan, heat 2 tablespoons of oil and add the cumin seeds and asafoetida. Let the cumin seeds crackle.
- Add the chopped spinach and sauté for a few minutes until the spinach is wilted.
- Remove from heat and let the spinach cool.
- In a mixing bowl, add the whole wheat flour, spinach mixture, and salt. Mix well.
- Slowly add water as needed and knead to form a dough. The dough should be firm and smooth.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Divide the dough into small balls.
- On a lightly floured surface, roll out each ball into a small circle.
- Heat oil in a deep-fryer or pan to 350°F (175°C).
- Carefully drop the pooris into the hot oil and deep-fry until golden brown, flipping them occasionally.
- Remove the pooris from the oil with a slotted spoon and drain on paper towels to remove excess oil.
- Serve warm with your favorite curry or dal.

Note: If you don’t have spinach and you still want to make poori. You can simply omit the spinach and cumin seed, asafoetida and follow the rest of the steps.
