Paalak Poori

Palak poori, a popular Indian dish made with spinach and deep-fried wheat flour balls:

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup chopped spinach (palak)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1/4 tsp asafoetida
  • Salt to taste
  • Water as needed
  • Oil for deep-frying

Instructions:

  1. In a pan, heat 2 tablespoons of oil and add the cumin seeds and asafoetida. Let the cumin seeds crackle.
  2. Add the chopped spinach and sauté for a few minutes until the spinach is wilted.
  3. Remove from heat and let the spinach cool.
  4. In a mixing bowl, add the whole wheat flour, spinach mixture, and salt. Mix well.
  5. Slowly add water as needed and knead to form a dough. The dough should be firm and smooth.
  6. Cover the dough with a damp cloth and let it rest for 30 minutes.
  7. Divide the dough into small balls.
  8. On a lightly floured surface, roll out each ball into a small circle.
  9. Heat oil in a deep-fryer or pan to 350°F (175°C).
  10. Carefully drop the pooris into the hot oil and deep-fry until golden brown, flipping them occasionally.
  11. Remove the pooris from the oil with a slotted spoon and drain on paper towels to remove excess oil.
  12. Serve warm with your favorite curry or dal.

Note: If you don’t have spinach and you still want to make poori. You can simply omit the spinach and cumin seed, asafoetida and follow the rest of the steps.
